Defaix Chablis 1er Les Vaillons (750ml)
A great example of classic cool, crisp, and crunchy Chablis. Super energetic with notes of struck match, lemon curd, and seashells. There’s tons of length and complexity here: a good sign for the future, though this wine is drinking very well right now. Lees stirring and organic fruit adds weight, texture, and complexity on top of the precise mineral notes that the region is so highly regarded for.
