Guide to Canada’s Best Wines – Top 10 Sparklings list. The 2019 is a single-vineyard bottling with all fruit sourced from growing partners across the street at Raven Hill Vineyard in Wolfville, Nova Scotia.  Its 100% Pinot Noir, grown organically.  Two thirds of the fruit was destemmed into the press for an overnight skin soak while the remaining one third was pressed whole-cluster. A full malo-lactic conversion in the base wine and 11 months aging on the lees softened the beautiful natural cool climate acidity, enhancing texture and mouthfeel.  The wine is dry at just 4 g/L dosage.
