Within Spain, seeing “Reserva” on a bottle indicates a minimum three years of aging before release but luckily for us it has now been six. This 2017 Rioja has notes of dried dill, cedar, cherry, and a touch of tobacco. It is a medium to full-bodied red that can go with rich tomato sauces but as we go into April, all I can think about is how well it will pair with braised lamb. Add a bit of this wine, rosemary, and butter to elevate its sauce to other-wordly levels. Vegetarian? Roasted vegetables in a wine and butter sauce. Out of butter? Don’t you worry, there’s always wine.
